Food for thought Fridays - Craving Courgettes


I've been cooking so many meals with courgettes in them that my husband thinks I should change the name of this blog to 'Craving Courgettes'.

This week was especially bad; I came back from a five-day holiday to this:

One courgette had grown into a marrow the size of a watermelon.

Despite them being a prolific summer crop, I always think of courgettes as a handy winter vegetable - great for hearty meals like lasagne, soup, and stew.
To get around this seasonal quirk of nature, I grate up my abundance in summer and freeze it in ziplock bags, ready to pull out when I need it. 
The last two years I've managed to freeze enough to get me through the year until the next summer. It's really handy in the dead of winter when there's not much growing outside.
