Tuesday's tip: Make your own seasoning mixes

Give your empty seasoning containers a second life by filling them with your own special seasoning mixes.

I have two personalised mixes on my herb shelf - one for Mexican dishes and one for roast vegetables.

I can't tell you how much time I've saved in the kitchen by having these two mixes already prepared.

I used to mix up my Roast Vegetable seasoning every time I put a tray of spuds on. Now I simply sprinkle it out of its container onto my chopped up vegetables in their roasting dish. Dinner is ready to go in the oven.

I've shared my Mexican seasoning recipe with you already, so I thought I would share my Roast Vegetable seasoning recipe with you today as a special treat.

Roast Vegetable seasoning ingredients
  • 6T flour
  • 3T sugar
  • 6t chicken stock
  • 6t Italian or Tuscan herbs
  • 3t salt
  • 3t freshly ground black pepper
Method
Mix ingredients together and store in an airtight seasoning container until ready for use. To use, simply sprinkle the desired amount on your chopped roasting vegetables prior to cooking and mix through to coat.

What seasoning mixes can't you do without?
