I discovered this lovely Destitute Gourmet salad recipe a couple of weeks ago and absolutely love it. It is so simple to make, yet tastes wonderful and is one that toddlers can manage - just remove any nuts from their helping.
Carrots and apple are two of the only things still producing much in my garden, so this recipe is an easy way to combine them into a tasty side for lunch or dinner.
Ingredients
- 1 apple, grated
- 1 medium-large carrot, grated
- Splash of balsamic vinegar
- Sprinkle of sultanas or raisins
- Sprinkle of almonds or chopped walnuts
1. Place all the ingredients in a bowl.
2. Toss and serve immediately.
The apple and sultanas give this salad a lovely sweetness, which contrasts nicely with the salty crunch of the almonds and the spiciness of the balsamic vinegar.
