What to eat Wednesdays - Homemade pasta sauce (Guest Post)

My husband and I had his son to stay last weekend when it was cold, wet and horrible outside. I wanted to make a delicious, comforting meal for dinner, and as spag bol is one of my personal favourites, it was the obvious choice.

However, when I looked at the ingredients in my store-bought pasta sauce, it dawned on me how many preservatives, salt and other rubbish are included in the sauces I eat. I wondered if I could make my own sauce, which would not only be satisfying, but also (hopefully) taste great and be nutritious for my growing step-son and health-conscious husband. I discovered it was sooooo easy to do and it filled my home with the most amazing aroma of cooked tomatoes, garlic, onion and a hint of basil!


Method
1. Take two cans of tinned tomatoes.... you could use fresh toms if you have them - they are dirt cheap at the moment. Place in a pot on a medium heat and simmer for 30-40 minutes, until the liquid has reduced right down.


2. Add a little sea salt, fresh pepper and a dash of good quality olive oil.

3. Once the mixture is cooked down, add some fresh basil.....YUM!

4. In another frying pan, add more good quality olive oil and lightly fry off two onions and some garlic. Only use a medium heat - you don't want to colour the onion, just cook it down until they are juicy and sweet!

5. Add the mixture to the already-reduced tomatoes and you are away laughing!


All you need to do now is cook up some fresh pasta and mince, mix the whole lot together and voila!..... a fresh and tasty dinner.

  1. If you're using tinned tomatoes, you can swap one tin out for tomato paste and then your sauce is pre reduced!
