I can't believe it's already week two of Keeper of the Home's Plan It - Don't Panic meal planning challenge.
Last week fairly flew by. We stuck with our menu plan until the weekend, when I spent both days in the garden and didn't have energy left over for cooking. Takeaways were a welcome treat.
This week is all about the slow cooker as I test out recipes from Joan Bishop's NZ Crockpot & Slow Cooker Cookbook on my new Kenwood multi cooker.
I've used my slow cooker a couple of times now, and am finding it fits well into my day. I can prepare dinner while the girls are napping at midday, and everything is ready to eat by 6pm when Paul gets home from work. We always try to eat dinner together as a family, so this means Lily eats later than most children her age, but she doesn't seem to mind.
Dinner plan
Monday - Tomato topped lamb chops on couscous with broccoli and carrots.
Tuesday - Beef curry with cashew nuts on rice, mung bean salad.
Wednesday - Chilli vegetables with coconut, served with dinner rolls and beans.
Thursday - Meatballs with mint served on rice, sauteed silverbeet.
Friday - Honey mustard glazed chicken on mashed potatoes, peas and carrots.
Saturday - Beans with oranges and prunes, potato focaccia and salad.
Sunday - Leftovers.
