Plan It - Don't Panic menu plan week 4

OK, so some of you may have noticed I went AWOL last week on Keeper of the Home's Plan It - Don't Panic my menu planning challenge. It's semi-explainable.

I knew I was picking up some home-kill beef from my lovely friends Kate and Ben sometime during the week, so I could continue testing Joan Bishop's recipes on my new Kenwood slow cooker. However, I didn't know what sort of meat I was getting, or even when in the week I was going to pick the meat up. This made menu planning a tricky.

I ended up getting it late Wednesday night, but by then it felt too late to post a menu plan that was meant to be for Monday.

In any case, I'm back in the swing of things this week.

OK, that's an exaggeration. It's midnight on Tuesday and I have no idea what I'm going to cook for the rest of the week. But I'm sitting down to work it out right now - and I'm going to tell you what we had tonight and last night too so that I feel somewhat organised already.

Monday - Pumpkin, spinach, chicken and feta filo parcels. Salad. Lemon custard pie. (All cooked and brought over by my lovely friend Loz. Thank you Loz. You are a star in the kitchen.)

Tuesday - Soaked whole-wheat tortilla wraps filled with a Cajun mince and bean mix, leftover salad from Monday, cheese and sour cream.

Wednesday - Lamb with tamarillos on rice.

Thursday - Chicken hot pot

Friday - Beef in Burgandy on mashed potatoes, with sautéed cumin-infused cabbage.

Saturday - Leftovers.

Sunday - Peanut pumpkin soup with dinner rolls.

[Note: italicised meals are ones I'm testing from Joan Bishop's New Zealand crockpot and slow cooker cookbook.]

  1. I'm really loving the slow cooker. It's making dinner prep so much less stressful.

  2. I always had that problem with CSAs... I never knew what I had to meal plan with until Wednesday nights and by then I was too tired to be creative.
    My newly limited grocery budget should be inspiring me to meal plan, but it currently just reminds me of the few options I have!

  3. Some of these recipes sound really good....do you plan to post them once you've finished testing them? I love tamarillos, but I've never seen them over here. Also even though its fall, there is not a feijoa to be seen (another fav of mine).
