On Sunday I came up with a menu plan for the week but I'm using it more as a loose guide than a strict plan. Here's how it has already changed, partly because of the huge apple harvest we brought in on Sunday night, and partly because I've been revising and improving the plan as I go along.
(Note: I've bolded the foods we've brought in and crossed out the ones not made.)
Sunday:
To do: make Coconut Cocoa Date Balls (with chopped almonds instead of whole), make Cookie Dough Bites, thaw chicken, make glaze and soak rice for Monday night, make Dried Apple Rings, Apple Juice and Mini Apple Crumbles, soak porridge for breakfast.
Breakfast: Feijoa iceblocks, Tomato, Pineapple and Cheese Quesadillas
Dinner: Tuscan Lamb Forequarters,
Monday:
To do: Make yoghurt and Grain-Free Chocolate Raspberry Muffins Soaked Apple Muffins, Dried Apple Rings and Vanilla Poached Apples.
Breakfast: Scrambled eggs and leftover mashed potato Soaked Apple Cinnamon Porridge.
Lily's lunchbox: Cookie Dough Bites, Cheese and marmite sandwhich, Mini Apple Crumble, feijoas, cherry tomatoes (found a secretly prolific plant hiding in our garden)
Lunch at home for S and Emma: Cheese and marmite sandwiches, fruit, Cookie Dough Balls, Kale Chips and I can't remember what else we ate
Dinner: Crockpot Honey Mustard Chicken on Soaked Rice (with whole chicken, plus I ended up throwing the soaked rice directly into the crockpot in the last couple of hours of cooking to save time and power) and Garden Salad Crockpot Carrots and Steamed Broccoli
Tuesday:
To do: blend pancake mixture for morning (did it last night)
Breakfast: Grain-Free Chocolate Raspberry Muffins Blender Oat Pancakes with Vanilla Poached Apples and Homemade Yoghurt (Why bake with frozen raspberries when we have so many fresh apples that need using now?)
L's lunchbox: Yoghurt and frozen blueberries (and raspberries), popcorn Cheese and Marmite Sandwich, Soaked Apple Muffins, Chopped Fruit (feijoas and dried apple rings) and Vegetables (cherry tomatoes)
Lunch at home for S and Emma: Leftover honey mustard chicken and rice (froze this instead) Cheese and Pineapple Quesadilla (had a tortilla and pineapple pieces that needed using up), Soaked Apple Muffins
Dinner: Butter chicken on rice (using leftover chicken - it wasn't useable for this purpose so have finely chopped leftover honey mustard chicken, rice, carrots and broccoli and frozen it as Honey Mustard Chicken Casserole in freezer) Sausages, Mashed Potatoes, Creamed Onion (deliciously inspired by this post) and Garden Salad.
Wednesday:
To do: make dinner rolls Potato Focaccia and Cheese and Marmite Pinwheels using leftover mashed potato, thaw sausages for Thursday (already ate Sausages on Tuesday), soak rice for Thursday
Breakfast: Blender Oat Pancakes with banana and maple syrup Vanilla Poached Apples and Homemade Yoghurt
Lunch: Cauliflower popcorn, Apple Pie Smoothies, Cheese and Marmite Pinwheels, Cherry Tomatoes, Raw Milk and Cookie Dough Bites
Dinner: Vegetable soup (from freezer) with dinner rolls Potato Focaccia and sour cream
Thursday:
To do: thaw mince and chicken stock for Friday, make Coconut Cocoa Date Balls
Breakfast: Chocolate Breakfast Shakes
L's lunchbox: Dinner roll with butter and jam Cheese and Marmite Pinwheel, Mini Plum Crumble, chopped vegetables and apple rings
Lunch at home for S and Emma: Cauliflower popcorn
Dinner: Sausages, chips and garden salad with raspberry balsamic dressing (already ate this dinner on Tuesday) instead Limey Refried Red Kidney Bean Tacos topped with garden lettuce and carrots, cheese, salsa, tomatoes and sour cream.
Friday:
To do: thaw lamb and chicken stock for Saturday
Breakfast: Scrambled eggs on toast
Lunchboxes for L and S: Coconut Cocoa Date Balls (made with toasted sesame seeds instead of almonds - to share for morning tea),
Dinner: Asian Mince on Rice (cooked in chicken stock)
Saturday:
Breakfast: Fresh Carrot and Apple Juice, leftover mince on rice
Lunch:
Dinner:
