Sugar-free Sweetened Condensed Coconut Milk Recipe - THM S

As I mentioned a few days ago, I'm working on a series of allergy-friendly, refined-sugar-free recipes.

Today I'm going to share a recipe for Sweetened Condensed Coconut Milk. This recipe is ideal for people needing to avoid dairy and sugar, but who still want to bake delicious and healthy cookies and slices. It's also the perfect sweetened condensed milk for Trim Healthy Mama 'S' recipes.

I'll be sharing recipes that feature this Sweetened Condensed Coconut Milk in the coming weeks.

It's super easy to make, with only two ingredients, and surprisingly delicious. I don't always love coconut in things, but I love it in this.

As I mentioned, to sweeten the mixture I've used Natvia. If you prefer, you can substitute other healthy unrefined sugars like coconut sugar, rapadura or honey in the same quantity in this recipe.

Ingredients
  • 1 x 400ml / 14 fluid oz tin full-fat coconut milk (I used Trade Aid Organic Coconut Milk, which only has two ingredients - coconut milk and guar gum)
  • 1/4c Natvia, Truvia or Gentle Sweet

Method
1. Bring coconut milk to a boil in a small saucepan, whisking often.

2. Pour in 1/4c Natvia and lower heat to a bubbling simmer. Remain attentive to the mixture, stirring often to prevent it bubbling over. You want to find the sweet temperature spot, where the mixture will bubble pretty vigorously without bubbling over. This sweet spot was medium-low for me. As the mixture reduces, you may be able to increase the temperature a little as there will be less mixture to bubble over.

3. Keep simmering and stirring for 15-20 minutes, until you start to feel resistance as you run your whisk through the mixture.

4. Depending on how thick you want the sweetened condensed milk, you can keep simmering to further reduce the mixture, or you can turn the heat off and let the mixture slowly cool down, continuing to stir every few minutes to keep it smooth. It will thicken more once it's cool.

5. Transfer to a clean glass jar and store in the fridge for up to a week. Use as a dairy-free, sugar-free replacement in recipes calling for sweetened condensed milk.

  1. This is wonderful! Do you think the Natvia can be replaced with Xylitol or Truvia? I'm thinking, with some flavoring, it might make a fun coffee creamer! :) Thank you so much!

  2. Yes absolutely use those other sweeteners if that's what you have. The xylitol will make it a bit higher carb, but will still taste good. Let me know how you get on. :)
