See my relaxed happy face. Cheers.
The juice tided me over for a bit, so I ended up eating a late breakfast/brunch of pan-fried salmon basted in soy sauce, balsamic vinegar and fresh sage, served with quinoa and a garden salad. To save time later, I made extra quinoa and salad for future meals.
To satisfy my sweet tooth, I then ate a homemade bliss ball and a handful of fresh cherries for an after-brunch snack. I've been digging my bliss balls lately after discovering a secret ingredient that makes them delicious every time. I'll share the recipe with you one day soon.
My lunch was similar to breakfast, except I traded the salmon for a couple of boneless chicken thighs which I fried in pizza sauce, olive oil and balsamic vinegar. (We're on holiday and the pantry staples are lacking, so I had to get creative.)
My daughter, S, then whizzed us up a delicious sugar-free afternoon snack of mixed berry fro yo. She's been pretty tight-lipped about the ingredients, but based on what we have at the bach, I suspect she used frozen raspberries, blueberries and strawberries, as well as unsweetened Greek yoghurt, ice and Natvia.
S also cooked dinner for us tonight, with Paul's help. All the kids are taking a turn cooking this week, and they've planned out their own menus for it.
For tonight's dinner, S chose to cook Porterhouse steak, roast potatoes and sweet corn. It was delicious.
I then ate another bliss ball and a handful of cherries for dessert, because my sweet tooth rages constantly.
And there you have it.
What was your favourite meal today? Breakfast, lunch, dinner or snack? I think mine was the salmon, because it's a rare treat for me.
